Great credit is due to the Bruzzone brothers, who have transformed the very premises where they once operated as a simple delicatessen into an authentic temple of Piedmontese cooking. Today, across two small dining rooms of homey character – where a reservation is indispensable, even at lunch – a sequence of dishes takes shape that pays homage to tradition with rigour and passion. The offering is a celebration of timeless flavours: acciughe al verde, onion with vermouth and Blu del Moncenisio fonduta, agnolotti of impeccable pastry, rabbit al civet, guinea fowl, through to the classic desserts such as bonet and vanilla panna cotta. Course after course, the cooking wins one over through its forthright honesty and depth, making departure a reluctant affair: this is one of those places from which one rises from the table already longing to return.
