Forno Bravo Centrale is the newest establishment from the Dreamteam group. Alexei Buruv and Pavel Kokkov have been in the business for over ten years, and during that time, the group has opened 8 restaurants. This new one is located in the space previously occupied by the "Farsh & Bochka" bar. The core concept revolves around pizza, with the dough being proofed for two days. Forno Bravo Centrale offers a modern, accessible, and very atmospheric Italian experience in the heart of St. Petersburg. The head chef is Vasily Ratner, who previously worked with the group at Smoke BBQ and Smokey Bones, and the head bartender is Artur Emashev. In addition to pizza, the menu features simple appetizers made with excellent ingredients, a luxurious selection of handmade pasta, as well as freshly baked bread, homemade desserts, and focaccia. Everything that can be sourced in Russia is used here. For example, aged cheese from Krasnodar, cured meats from Rostov, marbled beef from Voronezh, and tomatoes and lemons from Uzbekistan. Everything that should be Italian is imported directly. This includes Gorgonzola from Lombardy and Taleggio from Bergamo, Sicilian olive oil, Ligurian anchovies, Parmesan flour, and Modena vinegar.
