Simplicity and an eco-style are the guiding principles of the new Forest restaurant. Nothing should distract the guest from the gastronomy – that is the philosophy of the project team. The restaurant's cuisine is European, but it skillfully combines Asian sauces and mixes of products from different regions. The menu is designed in accordance with modern trends in the author's gastronomic style. They use a lot of vegetables, seafood, and fish. The kitchen team strives to create vibrant flavors even in the simplest dishes. The main principle of the Forest team is fresh, high-quality ingredients, a light, low-fat, yet flavorful cuisine. (Chicken liver pâté with Prosecco jelly, eel with braised pear, Murmansk cod with cauliflower and capers, sorrel granita). Simplicity and an eco-style are the guiding principles of the new Forest restaurant. Nothing should distract the guest from the gastronomy. The emphasis in the eco-interior is on a botanical relief. It was specially created for Forest by the Ural artist Elsa Bashirova over several months. A total of 13 panels were created for Forest using natural materials: clay and flowers. In the restaurant's interior, everything is designed to reflect an eco-natural style. The tabletops are made of solid wood, and the bases are tree trunks. The restaurant's lighting changes throughout the day, from bright daylight to a more intimate, focused lighting in the evening. Upon entering and above the communal table area, there are cloud-like chandeliers made using 3D printing technology.
