In keeping with its previous vocation as a joiner's workshop, this place makes extensive use of wood in the decor – and the Scandinavian-style minimalism extends to the vegetable-forward dishes that draw on local ingredients. The young, efficient and dedicated team create a buzz as they work in the open kitchens laid out behind a counter. Carole Eckert's creative, strictly seasonal cuisine is inspired by the kitchen garden, for example leek and horseradish served hot and cold; crunchy fennel, coriander and ajoblanco; pink trout from the Sparsbach, woodruff and beetroot. A location with character, food packed with personality.
