A new fine dining restaurant, or, as the project's creators define it, "new era dining," has opened on Pulkovskoye Shosse in St. Petersburg, and it represents a continuation of the Nordic project spearheaded by Nadezhda Tretyakova. Daniel Hoglander, known for his work at Aloë (two Michelin stars) in Stockholm and the gastropub Black Milk, also in Stockholm, is the concept chef and the driving force behind Drevå. The name Drevå ("tree") is inspired by the image of Yggdrasil, the world tree in Scandinavian mythology. This universal metaphor reflects the project's philosophy, which draws on Nordic traditions and the great French culinary school, but also goes beyond them. Daniel Hoglander's cuisine is cosmopolitan and deeply personal. Skillfully combining ingredients from all over the world, while remaining true to his vision, Daniel freely uses culinary techniques from various countries. He breaks stereotypes, works with bold contrasts and strong emotions, and ultimately focuses on flavor. Avant-garde and decadence, old school and punk, the European North and the vibrant colors of the Maghreb, the Old World and Southeast Asia, classicism and rebellion, intensity and tenderness – all of this is "new era dining," the gastronomy of the future as we envision it. The authors of the Drevå opening menu have named it "Le Provocateur." While staying within the boundaries of fine dining, it challenges perceptions. It features playful interpretations of street food, bold and spicy flavors, and the use of unexpected ingredients. The "Le Provocateur" tasting menu consists of 14 courses (priced at 14,000 rubles), while the "Butterfly Kiss" gastronomic menu features 8 courses (priced at 5,500 rubles).
