About

Paying homage to the location and its historical name, the restaurant becomes a hub for showcasing four eras of gastronomic development in Russia.

The space is divided into two distinct areas: a bistro with a gourmet market and a larger restaurant. The "Central" restaurant's menu is a journey through time. Guests are offered dishes cooked in a traditional oven, characteristic of the period before the unification of Rus', as well as fermented dishes made with locally sourced ingredients. When creating the menu, Nikita Sechin frequently consulted I. Radetsky's book "St. Petersburg Cuisine" to recreate dishes typical of the Russian Empire. In addition to historical dishes, "Central" also features reinterpretations of popular Soviet-era dishes and contemporary creations using modern techniques.
