A modern bistro from chef Evgeny Vikentiev.

Evgeny Vikentiev, former head chef of the restaurants "Beluga" and "Wine Cellar," co-owner of the restaurants "Hamlet+Jacks" (St. Petersburg) and "Cell" (Berlin), and his St. Petersburg partner, Elena Antonichova, have launched a new modern bistro in Moscow. The concept of Centrale Bistro by Evgeny Vikentiev is based on a frequently updated menu featuring predominantly Italian, French, and Spanish influences. The dishes are prepared using seasonal, locally sourced ingredients and unconventional flavor combinations. Evgeny Vikentiev is the author of the menu, while chef Nikita Nikitin (formerly sous chef at Moscow's "Beluga") is responsible for its execution in the kitchen. A special feature of the project is the wine list, curated by Polina Smirnova (formerly of Lucky Group and Alba Group) and Darya Kozhevnikova (formerly of Grassa). It is divided into conceptual sections, offering guests a selection of wines from progressive producers and a wide range of champagne styles. For example, the "Act of Hedonism" section features popular and well-loved options. The "Fucking Fabulous" section showcases a collection of bold and trendy wines from iconic producers, including rare and limited-edition selections. The ironically named "Shame" section deliberately includes Prosecco. The bistro also features a curated cocktail menu by Ivan Sablin. The interior of Centrale Bistro combines warm minimalism with respect for the historical context of the building. The atmosphere is light and cozy, with vintage elements. The preserved marble floor and glass blocks evoke the aesthetics of Soviet modernism. The interior details, including the 70-year-old solid wood ceiling and all wooden elements, are handcrafted. The open wine rack at the entrance and the muted color palette emphasize the gastronomic concept and the thoughtful design of the space. The presentation complements the concept: dishes are served on designer ceramics handcrafted by Biscuit Ceramics, a well-known St. Petersburg company famous for its limited-edition series and unique approach. Wine is served in hand-blown glasses from Gentle Glass, a benchmark brand co-founded by Evgeny himself. The unique shape of these glasses unlocks the full aromatic and flavor potential of the wine.
