Biologie is a new gastro-bistro in Ilyinsky, designed in a chalet style. It's Ekaterina Alekhina's first independent project. The menu features original dishes made with natural ingredients, using a modern, biological approach to explore flavor combinations, complemented by a carefully curated wine list. The project's name, Biologie, perfectly reflects its concept: biology and biological processes are revealed in all their aspects. For example, the restaurant has its own modern laboratory where various processes, such as fermentation, can be carried out, allowing you to experience the taste of familiar ingredients in a new way. The menu is also heavily influenced by seasonality. This dictates the search for new ways to prepare, store, and age ingredients, taking into account how humans perceive certain combinations and flavors. Most dishes are cooked over an open fire in a wood-fired oven. Here, the traditional concept of a restaurant gives way to the format of a cozy living room, where dishes are prepared in an open space for the guests to see, and the chef is in constant, friendly contact with them.
