About

"Ba" (a familiar way to address a grandmother) is a Russian bistro. However, a new format and a new word have already emerged in popular culture: "shichnaya." The concept is based on the model of a classic Japanese ramen shop, but with a Russian twist: Instead of ramen, we offer "shchi" (and there are 5 varieties). Instead of tsukemono (Japanese pickles), we offer our own pickled vegetables. Instead of sashimi, we offer salted fish. Instead of Wagyu beef, we offer "salo" (cured pork fat). Instead of sake, we offer vodka. This is the core menu, which will remain unchanged. There is also a second part of the menu, which is updated every 2-3 weeks. This consists of 7-8 items, and here too we focus on Russian cuisine, but without exploiting the past or using overly loud slogans. It's very simple, recognizable at first glance in some cases, and in others, through the first taste – the food of our mothers and grandmothers. Our main motivation and idea is not to preserve the past, but to continue it. This doesn't mean that we are indifferent to the past. On the contrary, we feel very warm, tender, and deeply respectful feelings towards it. However, in this context, we believe it's unfair to "profit" from our history.
