This long-running dining room is from Guadalajara native Chef Francisco "Paco" Ruano. Located in the neighborhood of Vallarta Norte, the multistory space features a slender ground floor and an upper-level dining room with an open kitchen. Rich-toned wood tables, white-washed exposed brick, colored glass globe ceiling pendants and a wall lined with Talavera ceramic platters set a stylish tone. The tasting menu is comprehensive and shares a contemporary vision, featuring local Jalisco and Mexican products. A seafood presentation may include a plump local oyster dressed with coconut palm sap, a sea scallop set in a spicy ash sauce or an abalone tostada. Those who prefer an abbreviated version should consider the à la carte menu.
