Within a fascinating medieval palazzo, a spectacular spiral staircase leads to an elegant dining room where Liberty-style floor tiles and chestnut tables speak of taste and tradition. This is where the gastronomic project led by the talented Gian Marco Bianchi takes shape, encapsulated in his motto: new rural cuisine. The journey invites guests to rediscover the flavours of the land through a contemporary sensitivity. Today the offering is structured across two distinct itineraries: Misera/Mente, a five-course menu, and Migra/Azione, a complete nine-step experience. In both, dishes such as the shepherd’s raviolo with sheep’s ricotta and lamb jus impress with depth and intensity, while the grilled lamb with “cacio e ovo”, accompanied by a zabaione served alongside, delivers a moment of pure gastronomic expressiveness. The ideal toast comes from the local area: a sparkling wine from malvasia with a touch of sangiovese, made by the méthode champenoise and aged 36 months on the lees: a refined and identity-rich opening to an experience destined to leave its mark.
