Chef Vittorio Chirizzi has worked with renowned chefs and on various projects, both within the Italian culinary scene and beyond. He has experience working with chefs Umberto Rocca at the Spettacolo restaurant and Paolo Boccolini at the Donna Margherita restaurant. For the past year, Vittorio has been working as a brand chef on projects led by Glen Ballis.
His style is a delicate balance of classic Italian traditions and modern techniques, which allows him to highlight the natural flavors of each ingredient. This approach is what guests have come to love and appreciate at Kalabasa and Nouge for many years, and the teams there are constantly striving to improve, evolve, and bring something new to the table every day. With Vittorio, these projects are poised for new chapters, flavors, and combinations.
Vittorio's career began even before university, when he was studying advertising. His first job in the restaurant industry was at Il Patio, where he immediately started working on the main Italian dishes: pizza and pasta, which have remained a constant throughout his career. His passion led him to the kitchen, and a year after graduating, Vittorio began developing his skills as a chef, working with Denis Krupnya at the Meatball Heaven restaurant on Bolshaya Nikitskaya Street. His passion for gastronomy and his desire to grow quickly led him to the position of sous chef and further advancement in other projects.
