"Pa-Paella" is a project by chef Viktor Lobzin, featuring his signature cuisine with a Spanish influence. It opened in 2016. Viktor is a student of Adrian Ketglas (now a Michelin-starred chef).

Viktor Lobzin is a true master of his craft, for whom gastronomy is not just a profession, but a calling. From a young age, he was fascinated by the culinary arts: the sounds of chopping, the aromas of simmering and frying food, everything that happened in the kitchen captivated him. At the age of 16, while still in school, Viktor first found himself in a professional kitchen. Starting as a kitchen assistant, he gradually learned the secrets of the trade, progressing through all the stages – from cook to sous chef – until, at the age of 22, he became a head chef. This rapid ascent speaks to his dedication, determination, and talent, which enable him to create true masterpieces every day. His love for gastronomy and his thirst for new knowledge led him to Spain, where he not only studied local traditions but also deeply immersed himself in the spirit of Mediterranean cuisine. The flavors and aromas of Spain inspired Viktor to open his own establishment, where paella – a symbol of warm and heartfelt Spanish cuisine – takes center stage. Over his more than twenty-year career, Viktor has become a co-owner of a Spanish restaurant in Moscow and the brand chef for several successful restaurant projects. Today, Viktor Lobzin is a guardian of the gastronomic philosophy of Peshi. His extensive experience working with seafood and Mediterranean ingredients, as well as his pursuit of perfection, his rejection of artificial additives, and his unique approach to presentation, transform each dish at Peshi into a true work of art. He creates harmonious flavor combinations where the freshness and natural taste of seafood are fully revealed. Each of his dishes is a combination of aesthetics and taste, making a visit to the restaurant an unforgettable and luxurious experience.
