The chef has already begun updating the restaurant's menu. Valery focuses on clean flavors and exceptional quality presentations. His meticulousness is evident in the signature brisket, prepared according to a 19th-century recipe. One of the most important aspects of the chef's work is his expertise in meat preparation, including dry-aged striploin steak with Brie cheese and onion confit, porterhouse, and exceptional work with Wagyu A5 beef, which has brought a new culinary trend to Nizhny Novgorod. Valery is not afraid to experiment and constantly surprises with interesting combinations, blending familiar ingredients. The chef is not only a culinary expert but also an excellent teacher and manager. Valery has already trained two chefs for other establishments, and he has also assembled a cohesive and professional kitchen team at Dodici Grill. His extensive knowledge and experience help the chef to be open to experimentation while not forgetting the classics, and his excellent communication skills maintain his authority among his colleagues.
