About
Born in the Kostroma region, in the city of Volgorechensk. He graduated from a technical college, completed a course in French cuisine at the online school Le Cordon Bleu, and also completed a basic course for chefs at the Microwave School (St. Petersburg). For over 10 years, Nikolai has worked in Yaroslavl at the restaurant holding "SchastyeEst". In 2025, he opened the Silvie restaurant, specializing in Russian-French cuisine, and serves as its head chef.
For Nikolai, gastronomy has become a language of self-expression. At the same time, for him, cuisine is not only creativity but also discipline: controlling product quality, paying attention to food safety, and strictly adhering to standards. He believes that gastronomy should be not only bright and inspiring but also reliable. This combination—respect for the product, care for the guest, and confidence that the taste and quality will always be high—is his style.
In his work, he relies on classic techniques of the French school, but always seeks opportunities for original solutions. He draws inspiration from seasonal, local products, and cultural traditions, which he reinterprets in a modern way.
In his free time, he tries to stay active: he plays football with friends, where passion and teamwork are important, and he goes to the gym to stay in shape. But the main source of joy and inspiration is his family.
