About
Chef Mamuka Bodjgua was born in western Georgia, in the Colchian Valley. From a young age, he helped his mother in the kitchen, learning the art of making dishes like pkhali, khachapuri, khinkali, satsivi, lobio, and other traditional Georgian dishes. In addition to preserving family recipes, Mamuka is passionate about researching ancient methods of preparing Georgian cuisine. Specifically for the guests of "Dedi," Chef Mamuka Bodjgua uses authentic Megrelian and Imeretian cheeses, Megrelian pepper, adjika, and spices that are sourced and prepared in Georgia according to ancient recipes, using salt from Svaneti and drops of mountain water. Here, you absolutely must try the meat cooked on the grill, as well as the fried khinkali with lamb, mushrooms, or potatoes and Sulguni cheese.
