Mulla Yalcin We operate with a hyper-local sourcing model around Præstø Fjord, working closely with nearby farms, responsible fisheries and small-scale producers. We purchase whole animals to ensure full utilisation and our menus adapt daily to reduce waste, supported by fermentation and other preservation techniques. We continuously reduce energy and water consumption and have eliminated single-use plastics.
