About
Andrey Anikiev is the head chef of the restaurant "roomi," a researcher and popularizer of the cuisine of the Russian North. He has experience working in Michelin-starred restaurants, participating in international festivals, and developing projects focused on Northern cuisine. After internships at the Pure&V restaurant (1 Michelin star) in France and at Anna's in Latvia, Andrey Anikiev returned home and initiated a new stage in the development of "roomi's" cuisine and the gastronomy of the region as a whole. Andrey explores the Arkhangelsk region through expeditions, where he studies traditions, recipes, daily life, customs, and history, and seeks to understand the cultural heritage of his homeland. He prefers to work with seasonal ingredients and collaborates with local farmers, hunters, and fishermen. This approach has gained recognition and support from local residents, as well as from a large number of tourists who visit "roomi." "Before, I didn't even think about what gastronomic traditions we have. I was looking outside the region, not within it. Now, I am interested in exploring the Arkhangelsk region, finding original recipes, and working with them. Each region is unique: everywhere there are dishes that characterize the area and its history. And expeditions for me are like a huge "intake" of material that I want to work with and share." Andrey Anikiev's main goal is not only to convey the flavors of the North but also to create a new gastronomic experience for each of his guests.
