In a small village in Llanes, a traditional family business has evolved with the times; the old ‘chigre’ (tavern) that one day was founded by the grandparents of the chef, Ricardo González Sotres, is seen today with two distinct areas: the informal Le Bistró, which maintains the rustic charm and offers a menu of traditional tastes, and El Retiro, a much more gastronomic space for us to discover its tasting menu. What will you find? A modern Asturian cuisine brimming with technique and creativity, respectful with the raw ingredients of the local area and tremendously balanced. Within the tasting menu, called San Patricio (a small tribute to the chapel of Pancar and the three-hundred-year-old holm oak at the entrance of the church), we can highlight both the Cod belly, pil pil, white asparagus, ricotta cheese and black garlic and the Asturian gochu snout stew, carabinero prawns and curry, a surprising Asian-Asturian fusion with three variations.
