Hazy, cramped and packed front to back, this high-energy galley draws inspiration from the coastal traditions of Spain and Portugal. Mosaic tiles, cozy wood paneling and lots of vermouth set the stage for sharp cooking that delivers big flavors with none of the fuss. Clams cooked in vinho verde, squid fried to a beautiful golden brown and deceptively addicting salads lead the way. Sea bream cooked on the plancha is another longstanding classic, but so too is the fried skate wing as well as the lamb burger. Everything is best shared among friends, elbow to elbow, huddled around a table.
