This restaurant in the elegant Salamanca district of the city is run by two young chefs, Jorge Velasco and Joaquín Serrano, and is usually full every day. It offers two highly distinct dining concepts: the informal Varra Fina on the ground floor, more focused on tapas, and the gourmet restaurant called Varra, found upstairs with tables adorned with tablecloths. Both proposals have been merged into one, offering visitors the best of both worlds: Joselito ham croquettes, freshly made Russian salad, lightly fried line-caught hake with green sauce, 40-day matured picanha steak tartare. The dishes evolve over the course of the year, highlighting the importance this restaurant places on seasonal produce!
