About
A mining-themed restaurant with a Siberian character, located in the heart of the Kuzbass region – in Kemerovo. For 19 years, we have drawn inspiration from the region's history, local products, herbs, wild meat, and fish, working with authentic Siberian recipes under the guidance of CEO Vadim Sidorov. The restaurant collaborates with the "Gastronomic Map of Russia" project, which aims to promote the local cuisine of the regions. In November 2020, following the "Taste of Siberia" workshop, the "Zaboy" restaurant was officially certified as a representative of Siberian cuisine. In May 2021, Vladimir Bragin, the head chef of the "Zaboy" restaurant, represented the Kuzbass region at the All-Russian Chefs Forum "Chef's Breakfast" as an expert on Siberian cuisine. It is important for people to know who they are, to feel a sense of belonging and identity. We all look, think, and cook differently, and in doing so, we enrich this world. This is the meaning of the word "local" – no one, in any place on Earth, can create something exactly like what is done in the Kuzbass, in Siberia, even if they have the same ingredients. Our mission today is to tell people about what Siberian cuisine is, that it exists, to use local products, and to support local producers.
