This restaurant is located in Severin's Resort & Spa, where guests can enjoy a stay in pleasantly understated luxury. In summer, take an aperitif on the quiet, leafy terrace behind the building, before heading inside to the upscale, stylish modern dining space to savour René Verse's culinary creations, which are crafted with precision and feel delightfully effortless. Nils Henkel, after whom this place is named, has clearly put his own stamp on the menu. His vegetable-centric cuisine, with which he made a name for himself once upon a time, is skilfully integrated here, including in both set menus, "Flora" and "Fauna". Ingredients of the very finest quality are showcased in dishes such as "Fonduta Ravioli – porcini, Comté foam, thyme broth" or "Carabinero – coconut milk, pea, calamansi". Courses can be swapped between set menus or ordered à la carte. The wine list deserves a closer look too, particularly the excellent selection of mature Bordeaux wines. Alcohol-free beverage pairings are also available, developed anew in house for every dish.
