His cooking focuses confidently on the essentials. Technically accomplished and refreshingly direct in style, his dishes impress with elegant, beautifully harmonious flavours, "sea bream, teardrop peas & vin jaune" and "Théo Kieffer squab, salsify & red cabbage kosho jus" being two cases in point.
