"Tengri" is a fine dining restaurant that focuses on locally sourced ingredients from the Altai region and is committed to sustainability. The principle of "reduce and compensate" is at the heart of the project's concept.

The panoramic restaurant "Tengri" is the main culinary project of the "Manzherok" resort. The name and symbol are derived from a Turkic concept meaning "heavenly" or "divine." The restaurant's team expresses its philosophy through dishes that showcase the pure flavors of Altai's local ingredients. Just as Turkic peoples revered celestial gods and the forces of nature, the project team strives to reconnect people with nature. The principle of "reduce and compensate" is central to the project's concept. "Tengri" has a completely different approach to ingredients and their selection: the focus is on the pure taste of the products. We aim to use everything that can be recreated in our kitchen or gathered from the forest, and to fully utilize the potential of all the components of each dish. The restaurant is committed to sustainability and does not purchase anything that can be created in its kitchen or gathered from the forest, and does not discard anything that can be given a new life. For example, organic materials such as wood, stones, dried flowers, moss, and antlers are used as decorations for the dishes. Support for local producers. The restaurant purchases products from local farmers, which significantly reduces the carbon footprint. The use of local products helps to support the local economy and contributes to the development of infrastructure in the Republic. The origin of the products is one of the main advantages! The forests and foothills of Altai are incredibly rich: honey from local apiaries, berries and mushrooms, cedar nuts, maral meat, and fish caught in nearby bodies of water. These products have a unique, authentic flavor that cannot be found in other regions. Year-round availability. By using techniques such as fermentation, dehydration, marinating, and acoustic freezing, we extend the seasonality of products throughout the year, so that guests of the "Tengri" restaurant can enjoy all the flavors of Altai at any time! Our chef prioritizes seasonal ingredients in his dishes and creates accompaniments around them. He says that Altai is a fusion of Northern and Asian cultures, and he reflects this fusion in his cuisine, or, conversely, plays on the contrast between Nordic minimalism and the multifaceted nature of the East.
