At Taïrroir, a portmanteau of Taiwan and terroir, chef Kai’s love letter to his home island is written in every detail, from the copper-decked ceiling evoking Taiwan’s rolling hills to Taiwanese songs playing in the chic gold-and-white room. Drawing on the chef’s two decades of experience of Taiwanese and French cuisine, the menu ingeniously captures local food culture underscored by Western techniques. Dishes are wittily named to rhyme with idioms and star seasonal local produce. Polished, attentive service further adds to the experience.
