The Shagal restaurant, offering avant-garde cuisine, is located at the Mövenpick Moscow Taganskaya, a premium hotel, and provides a unique gastronomic experience in the best traditions of avant-garde: vibrant, lively, and bold.
The Shagal restaurant opened in Moscow in the autumn of 2020, on Zemlyanoy Val street. The project is located on the first floor of the Mövenpick Moscow Taganskaya, a premium hotel – a new place for gastronomic experiences in the best traditions of the avant-garde: vibrant, lively, and bold. The innovative project is led by the young and creative Vitaly Baranov, a winner of the Accor Professions Challenge Russia 2013, who was responsible for the menus of five-star hotels during the Sochi Olympics. He has also worked with Igor Grishchenko ("Kokoko," a contender on The World's 50 Best Restaurants list), Artem Grebenshchikov (BoBo), and at City-Space in the "Swissotel Krasnye Holmy." "Avant-garde is definitely about moving forward, towards new perceptions and ways of thinking," says the chef. "At Shagal, we create a unique world where food is an art form, and the presentation is part of a theatrical performance." Each dish emphasizes unconventional forms, flavors, and textures. And, of course, the presentation is done using handcrafted ceramics from the Guzeva brand.
The menu also includes signature dishes for the entire Mövenpick hotel chain: beef tartare (1100 rubles), Ris Casimir with exotic fruits and curry (750 rubles), Zurich-style veal (1500 rubles), and Swiss carrot cake (550 rubles). These dishes are marked with a "seagull" symbol. The story goes that the founder, Weli Praguer, was inspired by the seagulls flying to Lake Zurich to scavenge for food, which led him to name the brand Mövenpick (from the German word "möwe," meaning "seagull"), and this became the symbol of the hotel chain.
The desserts deserve special mention, as the presentation of each one is a work of art in itself. "Cloud" is presented to the guest with liquid nitrogen, "Bella "Over the City"" comes with a painting on chocolate, and the bio-dessert contains no sugar and combines seemingly incompatible ingredients: white chocolate with coconut and cauliflower, milk chocolate with coffee and pumpkin, and dark chocolate with olives and currants.
During "Chocolate Hour," which takes place daily from 4:00 PM to 5:00 PM, you can meet with friends or colleagues and sample Mövenpick's signature treats. The chocolate and handcrafted candies with fillings are made in the restaurant's pastry shop by Vitaly Baranov and his team.
The avant-garde experience would not be complete without visiting the adjacent bar, where mixology experts create artistic cocktails with unexpected flavors. The bar menu features signature drinks dedicated to and named after masterpieces by Marc Chagall.
The interior design, created by the Archpoint bureau, is inspired by the works of the famous avant-gardist Marc Chagall and the timeless theme of love. The main colors are berry-red with a wine hue, a reference to the Swiss flag, and emerald green, reminiscent of a Russian malachite box. The bright colors contrast with the calm, light wood. The naturalness of the interior is emphasized by eco-friendly furniture from Scandinavian brands, a textured wall with a woven pattern reminiscent of traditional Swiss embroidery, and tables with tabletops made of "malachite-like" stone. Behind the decorative mesh on the wall, you can easily see a reproduction of one of Marc Chagall's most famous paintings, "Over the City."
