Polugar bar
About
A monobrand establishment specializing in "polugar" (a type of fortified wine), designed in the Art Deco style, offering a complete range of polugar products, with polugar itself serving as a key ingredient in signature cocktails.
St. Petersburg, Italian Street, 19 Website Concept by: Maxim Shinkarenko and the company "Rodionov and Sons" "Restaurant Rating of St. Petersburg" about the project The "Polugar Bar" located at 19 Italian Street is worth visiting for at least two reasons. Firstly, it's the only place that offers a complete range of polugar products, currently numbering 22. This type of wine was popular in Russia from the time of Peter the Great until 1895, when the distillation of grain-based spirits in copper stills was banned in the country. The family company of history enthusiasts, "Rodionov and Sons," recreated the traditional distillery in 2009, patented the name, and began producing this forgotten beverage, but not in Russia, rather in Poland. Nowadays, rye, barley, wheat, and buckwheat polugar can be found in many restaurants in the city, but the most comprehensive selection is only available at the "Polugar Bars" – one in St. Petersburg and another in Moscow. The second reason to visit the "Polugar Bar" is the selection of liqueurs made with the signature polugar spirit. Under the hashtag #drinkthealphabet, the head bartender, Ilya Netsvetayev, and his team offer shots representing every letter of the alphabet, from pineapple to apple. For example, a Friday evening for a St. Petersburg resident can be enhanced with the "CHPH" aperitif: blueberry, passionfruit, and horseradish. After a tough Monday, you can choose from flavors like jasmine, Isabella grape, zubrovka (a herbal liqueur), nectarine, elderberry, sea buckthorn, and lemon. All liqueurs are priced at 250 rubles, polugar at 200-500 rubles, and signature cocktails at 490 rubles. The "Polugar Bar" also has a tradition of making punch: every day at 8:00 PM, the bartenders create a new beverage, the recipe of which is never repeated within a month. As a snack, guests are offered fresh bread and two sauces for 300 rubles: options include borscht, vitello tonnato, carbonara, bell pepper, eggplant, and seven other variations. Interestingly, these sauces are prepared by Denis Sinitsyn, the head chef of the "Caviar Bar," and Caviar Russia is a co-owner of the "Polugar Bar" along with "Rodionov and Sons" – however, not a single grain of black caviar has made its way onto the menu. Because bread goes perfectly with this type of wine.
