The traditional Italian pizzas and pastas, which are the mainstays of the Petruccio menu, are prepared in the open kitchen according to recipes overseen by the brand chef, Domenico Caporusso. The "fast casual" concept is realized through a cozy atmosphere, fast and high-quality service, and a responsible approach to recipes and ingredients. The dough is made with natural Italian sourdough and up to 15% whole wheat flour, making Petruccio pizza a truly healthy option that customers enjoy both in the restaurant and at home. The unconventional approach to customer service surprises guests on their first visit and encourages them to return. After making their selection at the ordering area, guests receive a pager and can choose any available table. A geolocation system informs the staff which table each dish should be served to. After 6:00 PM, the experience becomes even more convenient for guests: the cashiers, who take orders at the bar during the day, move into the dining area, offering guests recommendations from the menu and assisting with their choices. Furthermore, the brand's positioning as the first "healthy" pizza is reinforced through a new offering for guests, available at the Petruccio restaurant in the "Iceberg Modern" shopping center (Popova Street, 22). Each guest creates their own salad: starting with a base of mixed arugula and spinach, the guest adds 4 basic (free) toppings, as well as an unlimited number of additional (paid) toppings. The cashier-barista offers a choice of 12 signature dressings, as well as seeds, nuts, or croutons, to complement each salad.
