The elegant grand café Pavlova, located in the heart of historic St. Petersburg, is a harmonious blend of Russian warmth and French sophistication, combining time-honored culinary traditions with innovative flavor combinations, captivating theatrical interiors, and a genuine love for good food. Inspired by the talent of the great Russian ballerina Anna Pavlova, the project invites you to immerse yourself in the atmosphere of a dazzling gastronomic performance, where every detail is meticulously crafted. Every element here creates a sense of anticipation, much like a theatergoer eagerly awaiting an exciting premiere. Despite its air of elegance, the restaurant's interior is completely free of pretension. The entire ambiance, from the display windows and mirrored wall panels with their noble patina to the comfortable sofas and curtains reminiscent of a theater curtain, helps to create a pleasant atmosphere and suggests that a visit here, however small, is a special occasion that stands out from the routine. The theatrical theme is reinforced by elements such as ballet barre-inspired decorations, a striking central chandelier, and lacquered boxes featuring a ballerina, which are used to present the cutlery. The bar area is uniquely located in the center of the room. One side, facing the entrance, features a display case with tempting desserts that can be purchased to take away. The menu was created by Roman Teslenko, whose career includes internships at the prestigious Moscow restaurants Koji and CuttaCutta, as well as working at one of St. Petersburg's most renowned establishments, "KoKoKo," and collaborating with culinary legends such as Mauro Colagreco and the Costardi brothers. Roman also lived abroad and traveled extensively, gaining experience with the unique characteristics of various national cuisines. In the Pavlova café's menu, the chef has combined the most vibrant elements of Russian and French cuisine, adding his own unique perspective to gastronomy. The menu features dishes such as duck pâté with foie gras on brioche, Olivier salad with Kamchatka crab, the classic French onion soup, and a fish soup made with salmon and perch, as well as liver with prunes in cognac and beef Stroganoff with a cream sauce made from white mushrooms. The dessert selection includes, of course, the famous "Pavlova," adorned with a figurine of a pristine white swan. It is accompanied by crème brûlée and a cashew tart with mango sorbet, and the pastry display case also offers delicate tarts with berries, éclairs, and a Napoleon cake with cranberries. The menu's sophistication is further enhanced by a carefully curated wine list, featuring only the most noteworthy selections, much like a successful theatrical repertoire. In selecting ingredients for the dishes, the chef prioritizes local sourcing, so many items are purchased from local farmers. In addition, some products, such as the signature pastrami, are prepared on-site, and fresh baguettes, croissants, and brioche are baked daily in the café's own bakery. Pavlova is a truly St. Petersburg café with a distinct French accent and a charming touch of nostalgia. It is the perfect place for a leisurely breakfast with loved ones, a romantic date, or an early dinner before a ballet premiere at the nearby Mikhailovsky Theatre.
