‘Ame ni mo makezu’ (Be not Defeated by the Rain) is a poem by Kenji Miyazawa about caring for others, unbowed by hardship. Feeling deep affinity for this attitude to life, the owner-chef declares through this naming his intention to live for others through his cooking. Having apprenticed at an izakaya run by a liquor shop, the chef stocks an impressive range of sake from all around Japan. Focusing on how well dishes pair with sake, the omakase-only service also uses fermented seasonings. No-nonsense Japanese dishes mixed with bar snacks express the owner-chef’s unaffected personality.
