In a small, maritime-themed, luxurious brasserie, (formerly La Marée where he kicked off his career!), Thierry Marx pays tribute to everything he holds dear: the transmission of know-how and a deep respect for nature, individuals, produce and producers, but also a love of culinary innovation. In the company of partner-chef Ricardo Silva, he signs a delicate, spot-on, modern score, dotted with nods to Asia and strewn with Marxian signatures such as soy risotto or, depending on the season, petals of scallops or seabream.
