Championing a concept of "crossroads" cooking, the chef explores how cultures, ingredients and places intersect, with a menu that unfolds like a narrative. Occasionally, he adds hidden items to the tasting menu as extras. The large marble table and conjoining chef's counter are the optimum front row seats for watching the chefs at work.
