Most Restaurant – your gastronomic and cultural experience in the Mitrofanov Estate, with its own garden and vegetable patch.
CONCEPT Just a few steps from the Belevsky Bridge, in the historical center of Borovichi, in the Mitrofanov Estate of the late 19th century, lies a completely new gastronomic story – the Most restaurant, offering авторская (author's) cuisine. Here, guests are invited to experience a unique cultural journey through food, using seasonal produce from the estate's own garden and vegetable patch, Novgorod specialties, a small concert hall, and a secluded cocktail bar, immersing themselves in a world of new flavors, aesthetics, and textures.
ATMOSPHERE AND INTERIOR The history of the Most restaurant is closely linked to the history of the city of Borovichi. In 1905, the Belevsky Bridge connected the two banks of the Msta River in the merchant center of Borovichi. The appearance of the bridge dramatically changed the lives of the city's residents. The bridge connected the Spasskaya and Trading sides. The bridge became a symbol of global change. Today, the Most restaurant is building a new cultural bridge between Borovichi, St. Petersburg, and Moscow. A bridge that connects people, gastronomy, culture, and traditions. Most, which has become a new landmark on the gastronomic map of Russia. The restaurant's interior evokes the history of the city: cast iron details, oak portals created by local craftsmen, and Mtselskaya tiles. ABOUT THE RESTAURANT The walls of the Most restaurant are adorned with gypsum panels created in the workshop of Leonid Kim. The panels reveal the historical connection between the Mitrofanov family – the former residents and owners of this mansion, prominent merchants and philanthropists – and the Antonov family, who gave the building a new lease of life, providing the city's residents with a place to meet and celebrate special events. "The plot in the large panels reflects the philosophy of the Most restaurant in a stylized way: two banks connected by a bridge. The flowing lines characterize harmony and balance, equilibrium, a lack of bustle, and the enjoyment of the moment. You can look at the panels endlessly and reflect on something profound, and for each person, it will be a completely unique experience," – Elena Skutova, designer. The entrance to the restaurant is decorated with stunning Italian chandeliers, and hidden in the heart of the space is a fireplace portal from Florence. CUISINE The head chef of the Most restaurant is Alexei Gorodnichev (from Blagoveshchensk). Alexei's gastronomic philosophy is to preserve and showcase the authentic, pure flavor of the product, to reveal its connection to nature and traditions. He prefers to rely on traditional recipes, using local and seasonal ingredients as much as possible. We are inspired by what grows in the beds of the lower garden of the Mitrofanov Estate and in the forests of the Novgorod region. To prepare our dishes, we use the freshest ingredients from our own garden: strawberries, tomatoes, cucumbers, salads, peas, currants, gooseberries, and other berries.
