"MERIANE" is a grand bistro with a holistic concept and meticulous attention to detail. Every element complements the overall vision, and their combination immerses guests in the era of the ancient tribe that made a special contribution to the formation of the traditions and culture of the entire Russian people. The culinary focus of the "MERIANE" grand bistro is modern Russian cuisine with an emphasis on local products. We focus on the commonality of Russian cuisine, rather than a specific region. The foundation is traditional recipes, supplemented by new technologies, forms, textures, and presentation. Most of the dishes on the menu are prepared over an open fire in a wood-burning oven located in the center of the main hall, allowing guests to watch their orders being prepared. Historical records indicate that the Merya tribe inhabited the territories of modern Vladimir, Yaroslavl, Kostroma, Ivanovo, and Ryazan regions from the 2nd to the 12th centuries. Surprisingly, despite their long existence, very little information about this small people has survived. The Merya were a Finno-Ugric tribe that migrated to these lands at a certain point in history. They were pagans and worshipped blue stones, one of which still exists in the territory of the "Plecheevo Lake" National Park and is a cultural heritage site. The Meryan language is lost, and their traditions, way of life, and values are shrouded in mystery. It is known that this was a peaceful tribe that engaged in agriculture, hunting, and fishing, and was not mentioned in any battles. This is partly because the Merya always lived in close proximity to the Slavs, who provided them with protection. Due to the shared territory, similar natural resources, and the unity of socio-cultural and technological processes, the "MERIANE" grand bistro chose the concept of Russian cuisine. The interior is designed in an authentic ethnic style, and every element embodies the concept. When guests enter the establishment, they are immersed in the atmosphere of the Merya era and feel as if they are in a modernized dwelling. Great attention is paid to natural materials: stone and wood, which emphasize the uniqueness of the place. The stones are a tribute to the object of worship of the Merya tribe – the blue stones. The hostess stand, table legs, some tables, the bar, and the floor are made of natural stone. The wood used in the decor symbolizes the territory inhabited by the Merya. Massive countertops, a ceiling decorated with antique beams and reeds, logs, and tree trunks all contribute to the concept of a dwelling. The walls of the grand bistro are designed to resemble clay, which further creates the feeling of a hut. In addition to the elements of the past, the project incorporates chrome surfaces, which add a touch of modernity to the overall design. The "MERIANE" grand bistro is a project with a story to tell, and the service team offers tours of the restaurant, sharing information about the life and culture of the Merya tribe and the concept itself. The project is filled with legends and rituals, including a daily tradition of striking a gong to summon good spirits to bless the meal, as was customary among their ancestors. The "MERIANE" grand bistro is a unique bridge to the past, through which we want to show the importance and value of history and the preservation of traditions.
