With a slogan like Volg de natuur ("Follow nature") and a name that refers to the fertile, clay-rich soil of the area, it is immediately clear that terroir is a key focus at Lutum. This vision is carried through into every aspect of the restaurant. The decor has a natural Zen feel, with an abundance of decorative features reminiscent of trees. The menu showcases the freshest ingredients sourced directly from local gardens and food forests.The surprise menu, designed to minimise waste, highlights local produce and adds an international twist with ingredients such as koji and miso. This cuisine is vibrant and exciting. They infuse a variety of pak choi creations, such as a leaf coulis and a stem slushy, with the subtle spiciness of tandoori and the floral complexity of different blooms. The chefs meticulously craft their dishes and regularly amaze diners with their sauces – the depth of flavour of the red wine and cardamom-based sauce they serve with venison is a case in point. The food at Lutum packs a punch!
