Chef Alfonso Martinez's tlayudas are the star of the show at Lugya'h, tucked inside Los Angeles's Maydan Market. It's a food market, so expect a casual experience where you'll order at the counter and find a seat, but do come hungry, as the portions are hearty. You can also expect a bit of a show, as the hand-pressed tortillas are cooked in comals over a live fire. Filled with beans, cheese, shaved cabbage and salsa, they're exceptionally well prepared. Add protein, especially their standout moronga (blood sausage), and it's easily a meal for two.
