In the heart of artistic and monumental Florence, on the first floor of Hotel La Gemma, a small L-shaped dining room of contemporary and elegant taste is concealed, distinguished by an original green boiserie and enriched by carefully considered details. The kitchen favours an essential and creative approach: each dish in the tasting menu (minimum four courses) is built from a small number of elements, worked with precision to express personal and distinctive ideas. The dessert is emblematic, a goat’s milk flan crowned with a thin caramel crust of strawberry, delicately finished with measured drops of aged balsamic vinegar.
