Along the road that encircles Ibla (one of the most evocative and picturesque historic centres in Sicily), the restaurant welcomes guests into a spectacular dining room that appears carved from the rock. The space, however, eschews all rusticity in favour of a refined elegance, accompanied by service of a high order: an ideal setting for a romantic and gastronomic evening. Vincenzo Candiano confirms himself as a chef of great talent, engaged in a continual exploration that places dishes now considered classics, which are indispensable fixtures on the menu, alongside more innovative creations, often inspired by the island. The welcome is very pleasant, with a small garden of aromatic herbs – wild fennel, mint, rosemary and other essences – whose fragrances provide a fitting prelude to the gastronomic experience. The cellar is also impressive, now numbering some 2,880 labels.
