Kitchen: Wild game with a Siberian flair. Locally sourced ingredients.

In the taiga region, surrounded by forests and reservoirs of the Angara River, in the small city of Bratsk, we opened the restaurant "Forest and Steppe," inspired by the idea of celebrating the richness of the animal and plant life in our region. The restaurant's menu features dishes made from wild game animals raised on the Podyelansky Island (300 km from the city), and local produce. This vast island, covering 6,000 hectares, is home to seven species of animals: wild boar, maral deer, roe deer, white-tailed deer, moose, red deer, and spotted deer. The entire production chain is controlled by a team of gamekeepers and wildlife experts led by entrepreneur Sergei Silko: from planting forage fields (oats, rye, wheat) to the final dish.

Chef Dmitry Zan skillfully combines classic culinary techniques with the robust and challenging-to-prepare wild game. Siberian berries, mushrooms, and herbs from the local area add distinctive flavors to the dishes.
