The quality of the fish, seafood and vegetables is exceptional. Alexandre Couillon's other talents include cooking over a fire, harvesting coastal plants, preparing fruit coulis, vegetable pickles, stock reductions and gutsy jus… not to mention his knack for cooking fish to absolute perfection. Memorable dishes include charcoal-grilled mackerel accompanied by candied beetroot, and the remarkable flame-grilled lettuce with blueberries and elderflower vinegar. At the gourmet food shop, Le Petit Couillon, the chef promotes produce from artisans and farmer partners.
