Despite its somewhat unusual location in an apartment complex, La Aquarela has become one of the leading names on the island’s restaurant scene. In fact, it is also a suitable spot for a little romanticism, as the tables located at the foot of the pool are ideal for enjoying the sunset!Here you will find highly technical and very delicate elaborations, rooted in the native flavours of the islands but not without their own personality, as the chef Desiré Cabrera—who has worked in renowned restaurants in Spain and abroad, including the two-starred Restaurant Andrew Fairlie (UK)—seeks to consolidate the proposal by looking closer to home. It uses local products, championing modern Canary Island cuisine through three set menus: Experiencia (combining ingredients from land and sea), Little Experiencia and Tierra (vegetable tasting menu). A standout dish? We really enjoyed the grilled aubergine dish, finished with a light yeast-based sauce.
