Hôtel des Roches has been entirely rebuilt with local Bormes stone. Perched on the rocks just above the waves, it boasts spectacular views from Cap Nègre to the Îles du Levant. The cuisine is pared back (one premium ingredient, one sauce and one side) and firmly anchored in the region with fresh fish from a Le Lavandou fisherman and herbs and vegetables from the garden in premium position. Tamaris oysters are steamed in seaweed and spinach, then finished with a caviar-laced beurre blanc. Line-caught seabass is served perfectly pearlescent on a pistou-infused vegetable ragout. Simplicity and fresh flavours set the scene of the lunchtime Roches menu.
