Managed by chef Olivier Elzer, L'Envol has elegant marble and wood finishings. Savvily prepared, artfully plated dishes, coupled with thoughtful service, capture the quintessence of French fine dining. "L'oursin d'Hokkaido" (sea urchin on a bed of prawns) packs a serious umami punch. The kitchen also prides itself on exclusive dishes crafted with caviars of varying brininess and age, accentuating the sweetness of razor clams, red prawns and the like.
