This elegant eatery off the Champs-Élysées signs an enticing lineup devoted to seasonal produce. Thomas Boullault, a jovial, modern-day innkeeper, slaloms between the kitchen and the dining room, where he takes the time to chat with diners. The food is spot-on, in the zeitgeist, indulgent and deliciously straightforward: poultry and lobster with green asparagus and a vin jaune and morel sauce, or an almost ethereal soufflé flavoured with Sicilian pistachios and a sour cherry sorbet. First-class food, outstanding ingredients, consummate sauces and a feel-good vibe.
