About

"Belochka" cafe is a neo-classical interpretation of Volgian gastronomy, based on the reconstruction of local Volgian cuisine and innovative flavor combinations using regional products.

"Belochka" is a creative project by the renowned Saratov restaurateur, Mamuka Topchishvili, who is reviving the legacy of a once-legendary confectionery shop with the same name, which operated in the heart of Saratov for over half a century. The memory of this place among the city's residents serves as a guiding theme in the new concept, where locality is not just a buzzword, but a tangible history embodied in both the cuisine and the design. The neo-classical approach to local cuisine is realized through the idea of restoring and reinterpreting traditional, and sometimes forgotten, Volgian recipes, and using familiar local ingredients in new and exciting ways, such as fish, butternut squash, Khvalynsk apples, Rovensky watermelons, lovage, physalis, Turgenev cherries, and fragrant field and meadow herbs. The menu features products that are the result of extensive research and exploration, with each variety of Volgian fish, berry, or flower having a story and culinary experiments behind it to select the best and most original options.

Inspired by the natural landscapes and gifts of the Volga, the dishes, especially those featuring fish, are masterfully crafted. The uniqueness of the new "Belochka" lies in its ability to offer its guests fresh, just-caught Volgian fish throughout all four seasons. This ambitious goal is achieved by the project team, who adhere to the principle of using 100% local products, grown and produced by local farmers in the Volgian region.

The theme of fish is vividly expressed in the "Volga Tom Yam," a dish with Asian-inspired patterns but with Volgian flavors and character. "Bersh with Chanterelles" evokes olfactory memories of a coniferous forest and the taste of fresh river fish, creating a unique symbiosis of Volgian delicacies and forest flavors. The bar menu, featuring exclusive infusions and a tea selection, continues the Volgian palette of flavors and aromas. Local berries, plant fruits, and combinations of over ten Khvalynsk herbs, carefully selected to enhance and complement each other, are used in the cocktails and teas. The emphasis is on wild cherry leaves, hops cones, rose hips, and red basil. Berries and herbs are a recurring theme in both the main menu, drinks, and pastries.

As a final touch to the gastronomic journey through traditional recipes, authentic dessert dishes elegantly complement the experience, reinforcing the connection to the history of "Belochka." The "Volga" pastry, recreated based on ethnographic materials, is distinguished by its refinement and lightness, and clearly identifies the region of origin of the dessert. The ice cream, made according to the GOST standard and served in specially crafted, handmade silver-plated bowls from the "Paprika" ceramics workshop, evokes childhood memories. The handcrafted "Belochka" chocolates, a symbol of the era in the form of a chocolate sculpture of a forest animal with golden nuts, will not leave anyone indifferent, whether they are aesthetes or gourmands.

The discerning visitor's eye will undoubtedly be drawn to the decorative elements made of wood and ceramics that adorn the interior, evoking the natural beauty of the Volga region. Historical motifs that connect guests to the city's memory are present in the design of the mirrors and the artistic painting on the walls, linking the past and present of "Belochka" and transforming it into a celebration that is always with you.
