A restaurant in the Caucasus Mountains, designed to showcase the close relationship and interconnectedness of Caucasian and Middle Eastern culinary traditions.

Located on the banks of the fast-flowing Mzymta River, in the heart of the popular mountain resort of "Rosa Khutor," the KAF-KAS restaurant has opened. Its concept aims to highlight the similarities and interconnections between Caucasian and Middle Eastern culinary cultures. This is a new project by Ajay Singh, the founder of the "Praviy Bereg" company (Rostov-on-Don), which includes La Fabbrica (in partnership with Novikov group), the Asian restaurant TYO, and the signature projects "Macao," "Osh Posch," "Yalla," and the "Osaka" chain of establishments with its own delivery service. Why KAF-KAS? This is how the name of this mountain region sounds in almost all Turkic languages. Say "KAF-KAS" softly... Can you hear it? It's like the wind rustling through the sand of distant deserts or the leaves of trees on the slopes of the Caucasus Mountains. It's as if someone is whispering a cherished recipe, passed down through generations. "When creating this project, we drew inspiration from ancient Persia, the cradle of all Middle Eastern civilization. It is from Persian cuisine that Caucasian, Georgian, Central Asian, Indian, and many other gastronomic traditions originated," says Ajay. The theme of continuity and ancient secrets that have survived to this day is emphasized by the visual design of the interior. The renowned designer Robert Dantsiev aimed to create a sense of primordial power and strength when designing the restaurant's interior space. Natural colors and materials were used in the decoration and design, including stone, wood, and dried plants. They blend perfectly with the majestic mountain landscapes that can be admired through the panoramic windows. Alexander Shapovalov, a young native of Kabardino-Balkaria who has absorbed the ancient traditions of cooking, heads the KAF-KAS kitchen. The chef has combined the best recipes from the Caucasus and the Middle East with modern trends, adding new and unconventional flavor combinations such as dolma with tzatziki and satsivi made with smoked shrimp. As a result, the KAF-KAS menu is rich, simple, and easy to understand, which does not diminish its appeal. It is also vibrant and diverse, just like the Middle East itself, through which caravan routes once led to all corners of the world. The recipes are based on local Southern products, fragrant Eastern spices, aromatic Caucasian herbs, and juicy fresh vegetables. Here you can try Georgian khachapuri and Turkish pide pizza, Moroccan shawarma, and Indian roti flatbreads with fillings, as well as lamb kyufta-shurpa soup with chickpeas and pumpkin soup with shrimp and harissa. For main courses, the grill masters cook a variety of kebabs and kofta, while the chefs simmer khashlama in a tajine and prepare a fluffy Persian pilaf in a pumpkin. And what is a Caucasian feast without wine? The sommelier will help you choose the perfect pairing for any dish from the extensive wine list, ranging from Italian to local wines. It is also worth paying attention to the signature mixes. The cocktail menu is tailored to the overall atmosphere of the restaurant and intrigues gourmets with names like "Eastern Mary" and "Aladdin's Lamp." KAF-KAS is a gastronomic oasis amidst the majestic mountains, where every traveler will find a dish to their liking. Here you can relax after a walk through the surrounding gorges or a busy day on the ski slopes, and spend a few pleasant hours enjoying a leisurely tasting of dishes and lively conversation with friends.
