Mirrors, golden accents, and glass details complement the open kitchen, where Italo Bassi leads his team. Technique and refined presentation stand out, whether in fish dishes (such as the textbook-perfect sole with mint-marinated zucchini and an exquisite beurre blanc foam recalling the classic à la meunière) or in meat preparations. Guests enjoy absolute freedom of choice: two tasting menus are available – one featuring the restaurant’s classics, the other with new creations, offered in various lengths – or they may order à la carte, which also includes luxury ingredients served in pure form, such as oysters, caviar, and raw seafood.
