The cooking of Cristina Bowerman, while allowing certain echoes of Lazio’s culinary traditions to surface, expresses itself above all in a creative register, drawing with ease upon influences from other gastronomic cultures, from Asia to Latin America. Considerable care is devoted to the sourcing of ingredients, selected through trusted and sustainable suppliers, as well as to the reduction of waste in all its forms. The wine list is also very well curated, enriched by an interesting selection of liqueurs and spirits.
