About
An Italian bistro in the heart of St. Petersburg, featuring little-known culinary recipes collected by the restaurant's chef during travels to off-the-beaten-path destinations in Italy.
The concept is based on lesser-known Italian recipes, gathered by Ilya Burnasov (the project's creator and former brand chef at Italy Group and Pio Nero) during numerous trips to less touristy areas. While exploring these hidden corners of the country, he met with local cooks and housewives to learn the most authentic and unusual recipes. FIGATA is a project that Ilya launched in collaboration with his partners, Maxim Zhukov and Alexei Kopyrin. The catchy name FIGATA comes from the Italian word "cool," and Ilya describes the new bistro as: "FIGATA – it's awesome!"
Ilya Burnasov has incorporated the results of his experiments with the shape of classic pasta, offering familiar flavors in an unconventional presentation. The same applies to other items on the menu: risotto served on a large board, where each layer of ingredients is perfectly balanced. The desserts are also unique, created by pastry chef Margarita Arzamazova (known for her work with Luigi Manji at Pinch in Moscow, a two-time bronze medalist at the PIR expo, and a finalist in the Chef a la Russe competition).
The dining room features a wine cellar, which stores all the items listed on the bistro's bar menu. The FIGATA team has also paid attention to cocktails. Moscow-based mixologist and bartender Yegor Stepanov (formerly head bartender at Syrovarnya, co-owner of Zhuravli, and Fucking 60s) has developed a special cocktail menu for those who might not be satisfied with just wine. The interior of the Italian bistro evokes the style of the 1970s in Italy. Restored vintage chairs, ceramic lampshades, and deep, warm tones – all of this creates an authentic Italian atmosphere that you can now experience right in the heart of St. Petersburg.
